Something sweet is brewing in Deep Ellum this year. The neighborhood will get its first hard cider company when Trinity Cider moves in next month. The bar and cidery will set up shop at 2656 Main St., next to Pecan Lodge, and is expected to open early this summer.
Trinity Cider will offer a full range of ciders for purchase in flights, growlers and glass pours. The cider spectrum will include everything from bone dry to sweet and traditional to experimental.
“Trinity Cider will be pushing the boundaries of conventional cider. Much like Deep Ellum is transforming a typical weekend experience, we will be transforming how you experience cider,” says owner Bryan Meyer.
At the helm of the project is head ciderist Jeremy Bridge, who recently arrived in Dallas from California Wine Country with two wine-making degrees and extensive experience in the world of cider. The menu will focus on dry to semi-dry craft ciders with a classic apple or pear base, but Bridge will also venture into inventive flavors, spices and aging techniques.
“I want to introduce people to new flavors and have my cider help them on a journey to find and respect their own subjectivity,” Bridge says.
There are rumors of a dark cherry barrel-aged tart cider, a peach cider and a champagne-style dragon fruit dry cider.

In addition to having one of the widest varieties of cider in town, Trinity Cider will be one of few bars to offer a menu of completely artificial flavor free and gluten free beverages. It will also cater to the health-conscious set with carb free and low sugar ciders.
The company plans to sell kegs to neighboring bars, so you’ll be able to try the refreshing brews all around Deep Ellum.
Trinity Cider officially moves into its space next month with an estimated opening date of June 1, 2018.
