DENVER — Colorado craft cidery, Stem Ciders, announces a collaboration with nationally acclaimed chef Daniel Asher of River and Woods, and Kelly Whitaker of Basta and Id Est Hospitality Group, to open the cidery’s first culinary venture, Acreage, located in Vista Business Park, 1380 Horizon Avenue, Unit A, Lafayette.

stemNestled in Stem Ciders’ facility that will be home to its cider making and office headquarters, the 5,000 sq. ft., 200 seat eatery and cider house is scheduled to open in early January. The expansive 12-acre property boasts unparalleled views of Colorado’s Front Range, serving as nature’s backdrop to the outdoor patio, bar, apple orchard and cider garden.

“Introducing a culinary experience to our cider has always been in our sights”, said Eric Foster, Stem’s cofounder and CEO. “While expanding our cider production and distribution, we hoped to bring the urban cider house experience found in our RiNo taproom to the countryside. Acreage was born out of an inspiring landscape and a dynamic team that I knew would set us apart from all other cider house and brewery experiences in the country. We’re excited about our collaboration with Daniel, Kelly and the Id Est team to bring an exciting new layer to the Colorado craft movement.”

Creative hospitality will guide the service experience while the food will be centered around wood fire grills inspired by cider houses of the Basque Country. Local roasted meats and vegetables over the hearth will confirm the team’s commitment to local, sustainable, fair food. Chef Asher will drive the menu and sourcing ethos with Id Est hospitality Group guiding the vision and culture for the concept.

“Stem Ciders shares the same love of well-crafted ingredients that I enjoy- their cider speaks for itself. They have a high level of integrity while elevating the beautiful simplicity of a damn fine glass of cider, said Chef Daniel Asher. “I am excited to work with the Stem team and Id Est Hospitality to co-create a culinary experience that brings together the passion of wood fired rustic cookery alongside the exceptional farmers and ranchers that make Colorado’s agricultural region so remarkable”.
